
Ingredients
3 ripe bananas (Did you know that you can freeze ripened bananas - either in their skins or peeled? I always keep a bag in the freezer. Great for smoothies too!)
225g (8oz) cake flour
3 teaspoons baking powder
Pinch of salt
50g (2oz) soft margarine
50g (2oz) light brown sugar (I didn't have any so I used white sugar this time)
Grated rind of one lemon (or dash of lemon juice)
1 egg
3-4 Tablespoons milk

Method
Peel the bananas and mash into a puree
Mix the flour, baking powder, salt, margarine, sugar and lemon zest until well blended. Set aside
Mix the bananas, egg and milk into a soft batter
Mix the two bowls together.
If necessary, add a little extra milk
Grease & flour a loaf tin and pour in the mixture
Bake in an oven heated to 190 degrees C (375 degrees F) for 45 minutes
